Sweet Potato Chocolate Chip Coconut Cookies

Looking for another guilt-free, good-for-you-cookie recipe?! Of course you are!  You will never guess there is sweet potato in these cookies.  It really helps keep them moist and is full of awesome goodness like Vitamins B6, C, and D.  They’re also packed with iron, fiber and magnesium; and they are a fabulous complex carb.  So next time you’re cooking sweet potatoes for dinner, boil a few extra so you can make these cookies for dessert – yum!Sweet Potato Chocolate Chip Coconut CookiesPrint Recipe

Makes 13 cookies

2 cups cooked sweet potato, pureed
1/2 cup oat flour
1/2 cup nut butter (I used PB2)
2 eggs
2 Tbsp coconut nectar (or agave, honey, maple syrup)
1 tsp vanilla
1 tsp cocoa powder
1/2 tsp baking soda
1/2 tsp baking powder
1/3 tsp cinnamon
1/4 tsp ground cloves
1/4 tsp all spice
1/8 tsp sea salt
1/4 cup dark chocolate chips
3 Tbsp unsweetened shredded coconut

Preheat oven to 350F.  Add dry ingredients to a large bowl (oat flour, baking soda, baking powder, and spices) mix well together. Sweet Potato Cookie Add nut butter and mix well with your hands or a fork. Sweet Potato Cookie2 Add in eggs, vanilla, coconut nectar, and sweet potato, mix with hand mixer. Sweet Potato Cookie4Fold in chocolate chips and coconut.Sweet Potato Cookie5Line a baking sheet with parchment paper or use a non-stick baking sheet.  Spoon batter onto baking sheet 2″ apart.Sweet Potato Cookie6I used an ice cream scoop and it made pretty large cookies, I got about 13 cookies from the batter.  You could make smaller ones if you prefer. Press down on the cookies with a fork.  Bake for 15 minutes.Sweet Potato Cookie7Remove from oven and let cool.  Store in an airtight container.

    I am making these this evening! But I am totally scared by cups as I am in the UK…I guess I would be able to tell from the texture? But roughly how many sweet potatoes do you need? And I was thinking about 5-6 tablespoon PB would do? I don’t want them to go wrong!! The rest I think I can figure out! Thanks

      The sweet potato equaled about 300-350 grams if that helps. And 1/2 cup of peanut butter would be 8 Tbsp. They are definitely a more soft cookie 😉

        Thanks, I think I made them too big as I only made 6 haha! But at the moment they look and smell great, they are just cooling! If they turn out well do you mind me posting the recipe on my blog in metric measurements? Will put a link to your site of course
