I know I normally do these on Friday, but I missed it last week so here it is only a couple of days late 😉
It was a pancake type of morning, a lazy morning, a “I just want to eat these then get back into bed” kinda morning. I had a large bag of ripe bananas that either needed to be baked into something or frozen for smoothies. I opted for a bit of both and came up with these pancakes that totally hit the spot! Let’s warm up the griddle…

Serves 1
2 ripe bananas (about 200g)
1/4 cup liquid egg whites
2 Tbsp oat flour
1/8 tsp baking powder
Dash of cinnamon
Few drops of liquid stevia (optional)
Heat griddle or frying pan to medium-high heat. Add all ingredients to a blender and blend on high. Spray pan with non-stick spray. Pour about 2 Tbsp of the batter per pancake.Â
Cook for a few minutes a side until golden brown.
The batter made about 8 small pancakes, you could make them bigger, I just find them easier to flip when they’re small.
I topped mine with maple syrup, sliced bananas and cacao nibs. Yummmm!
