Happy Meatless Monday everyone! I hope you’re all enjoying your long weekend. I’ve been trying to come up with zoodle recipes since getting a spiralizer, this is actually a really quick and easy dinner; it also makes an awesome lunch the next day too π You definitely don’t need meat and pasta to enjoy spaghetti and meatballs!

Black Bean Meat(less) Balls

Serves 3
Ingredients
- 1 medium zucchini, spiralized
- 1 15oz can of black beans, drained and rinsed
- 1 small shallot, diced
- 2 cloves of garlic, minced
- 2 Tbsp bread crumbs
- 2 Tbsp flaxseed + 6 Tbsp water
- Handful fresh parsley, chopped
- Handful fresh basil, chopped
- 1 Tbsp Italian spices
- S & P to taste
- Your favourite marinara sauce
Instructions
- In a small bowl, add flaxseed and water, mix well and set aside.
- In a medium bowl, add the black beans and mash with a fork. Add all the other ingredients and mix well.
- Once the flaxseed and water has thickened, stir into mixture.
- Preheat a large frying pan on medium-high heat. Spray with non-stick spray or drizzle with olive oil.
- Form mixture into balls, add to the frying pan and heat for 2-3 minutes a side, flipping frequently.
- Meanwhile, spiralize a medium zucchini and add to another frying pan over medium heat. I only cook these for about 5 minutes, but it depends on how soft you like them.
- Top your cooked zoodles with meatballs and your favourite marinara sauce, homemade or be lazy like me and use your favourite organic jarred sauce, I like Trader Joe's π
- You don't need a spiralizer to enjoy these meat(less)balls, they are good over pasta, quinoa, whatever!
