What’s in my lunchbox?!

Happy Friday!! It’s a long weekend up here in Canada – May 2-4 as we like to call it 🙂  This is usually the kick-off weekend for camping trips and summer getaways! Do you have anything fun planned?

It’s been a few weeks since I showed you what’s in my lunchbox, so let’s check it out…

Morning Snack: One vegan chocolate chip oatmeal cookie, half a banana and a handful of red grapes.lunchbox3Lunch: Spiralized sautéed zucchini, with black bean “meat” balls and marinara.  Super yummy! I’ll have the recipe posted for Meatless Monday so be sure to check back 🙂lunchboxAfternoon Snack: Greek yogurt with vanilla protein powder, 1/2 Tbsp of chia seeds and a splash of almond milk.  Topped with dried mulberries and goji berries.  I’ve been addicted to mulberries lately!
