If you’re craving something sweet and looking for a guiltless treat, I have the cookie for you! These are very low in sugar thanks to Lily’s Chocolate Chips which are sweetened with stevia. They are also vegan, all natural and non-GMO. They are amazing!! If you haven’t tried Lily’s chocolate you’re missing out.

Makes 24 cookies
1 cup gluten-free flour blend
3/4 cup dry, gluten-free oats
1/2 tsp baking powder
1/2 tsp baking soda
1/8 tsp sea salt
1/2 cup coconut sugar
1/2 cup vegan butter, softened (I use Earth Balance)
1 tsp pure vanilla extract
2 Tbsp almond milk
1 Tbsp ground flaxseed + 3 Tbsp water
1/2 cup Lily’s chocolate chips
Preheat oven to 375F. To make the flaxseed “egg”, whisk 1 Tbsp of ground flaxseed with 3 Tbsp of water in a small bowl and set aside.In a large bowl, add flour, oats, baking powder, baking soda and sea salt. Mix until well combined.
In a medium bowl, add sugar, butter, vanilla, almond milk and flaxseed “egg” (by now it should have thickened and gelatinized). Mix with a hand blender on medium until well combined.
Add this to the dry mixture, stir well. Fold in chocolate chips.
Spoon onto a baking sheet lined with parchment paper.
Bake for 7-9 minutes. Remove from oven and let cool.
