What’s for Breakfast?! Super Green Avocado Smoothie

GreenSmoothieChallenge300x250Happy Friday everyone!!  As you might know I’ve been doing a 21 Day Smoothie Challenge from the Blender Babes.  The challenge is to replace one meal with a smoothie for 21 days. I usually have smoothies most mornings, so I thought I’d share a recipe from the challenge. If you’d like to join you can sign up here, it’s free!

This smoothie is full of green goodness including avocados.  Have you tried avocados in your smoothies? They add a nice creaminess and you get your dose of healthy fats.  Avocados are also packed with Vitamin E and antioxidants.  My biggest pet peeve is when I buy a bag of avocados (usually on sale!) only to find I can’t use them up fast enough before they go bad!  It’s like they magically all go bad at the exact same time.  Well I have a little tip for you!  If you like them in smoothies, you can freeze them.  I just cut them in half, scoop out the flesh, then put them in an air tight freezer safe container or Ziplock freezer bag.  Now you always have fresh, green avocado for your smoothies!  You can also freeze mashed avocado with lime juice squeezed on it and use it for guacamole at a later date.  So stop wasting your gorgeous avocados and start freezing them 🙂Avocado

Serves 1

1 cup unsweetened almond or any non-dairy milk
2 cups spinach
1/2 avocado
1 green apple, cored and halved
1 cup mango or pineapple
1 tsp fresh ginger
1 cup of ice if using fresh fruit, less if using frozen fruit
