These cookies are bursting with superfoods, they have quinoa, maca powder, goji berries, bananas, flaxseed, cinnamon, coconut…I don’t even feel right calling these “cookies”. They’re more like superfood power snacks!
The list of ingredients can be interchangeable too. I had so many ideas running through my head that I wanted to add everything! It also helps when you just happen to have the ingredients in your cupboard. To make it easy, for the dry add ins if you don’t have one, sub it with another, or add in raisins, dried fruit, cacao nibs, whatever you like!

Makes 17 cookies
1/4 cup dry quinoa, rinsed
1/2 cup water
2 ripe bananas, mashed
1/4 cup unsweetened almond milk
1/3 cup flaxseed meal
1/4 cup coconut sugar
3 Tbsp maca powder
1 tsp cinnamon
1 tsp baking powder
1 tsp baking soda
1 tsp vanilla extract
1/8 tsp sea salt
3 Tbsp dark chocolate chips (I use Enjoy Life)
2 Tbsp unsweetened shredded coconut
2 Tbsp goji berries
1 Tbsp chia seeds
First, add the quinoa and water to a medium saucepan, bring to a boil, reduce heat and simmer for 15 minutes until the liquid is absorbed. Set aside to cool. This step can be done the night before to save time.Preheat your oven to 350F. In a large bowl, add the cooked/cooled quinoa and all the remaining ingredients, mix well. Line a baking sheet with parchment paper. Spoon mixture onto baking sheet. I got 17 cookies out of the batter, you could get more or less depending on the size you want. Bake for 20 minutes. Remove from oven, let cool, devour or store in an air-tight container.
