Happy Meatless Monday! I have a super easy vegan lunch that I know you’ll love. Smashed chickpeas and avocados all rolled up make the perfect meal – it’s even better than egg salad 🙂Print Recipe
Serves 2
150g about 1/2 cup of chickpeas
1/2 avocado
1 celery stalk, diced
1 green onion, diced
1 Tbsp Vegenaise
1 tsp Dijon mustard
Your favourite spices, I didn’t measure but added nutritional yeast, paprika, cumin and cracked pepper
Add chickpeas and avocado to a medium bowl, mash with a fork. Add in remaining ingredients and mix well. Roll up with some spinach or lettuce in your favourite wrap and enjoy!!
