What’s in my lunchbox?!

I’m so excited for this extra long Easter weekend!  What do you guys have planned?  We’re keeping it pretty low-key.  I’m off, but my husband works all weekend 🙁 We’re actually celebrating his birthday today (it was Wednesday) with BBQ steaks and cake – yum! We’re also hoping to get the soil for our garden bed this weekend too.  I’ll be sure to update you on that process since it’s my first official garden!

OK, onto my lunchbox this week….

Morning Snack: One slice of PB2 Chocolate Plantain Bread with 1 Tbsp PB2.  To make the plantain bread I blend 2 very ripe, black plantains, 1 scoop chocolate protein powder, 3 Tbsp PB2, 1/4 cup almond milk, 1/2 cup liquid egg whites and stir in 1 Tbsp of chocolate chips.  Pour into an 8 x 8 inch baking dish and bake at 375F for 25 minutes.  Cut into 4.  Then I spread 1 Tbsp of PB2 on top. SO good!lunchbox3Lunch: 4 oz turkey burger with 1 Tbsp organic ketchup, grilled asparagus and a green salad with raspberry vinegar. lunchbox1I have been loving this triple washed, organic spring mix.  It’s so much faster than washing and spinning lettuce.  It’s more expensive but good if you’re in a rush!lunchbox2Afternoon Snack: Greek yogurt with vanilla protein powder, 1 tsp maca powder, a couple tablespoons of almond milk, topped with strawberries and cacao nibs – yum!!lunchbox4Don’t forget to drink your water!
