Makes 8 Bars

1 cup dry gluten-free oats – I use Bob’s Red Mill
1 1/2 scoops chocolate protein powder
3 Tbsp red maca powder
1 Tbsp ground flaxseed
1 Tbsp cocoa powder
1 tsp baking soda
1/8 tsp sea salt
1 cup unsweetened applesauce
1/4 cup unsweetened almond milk
1/4 cup liquid egg whites
2 Tbsp chocolate chips
A few drops of liquid stevia to taste – optional

Preheat oven to 350F.  In a medium bowl, combine dry ingredients: oats, protein powder, maca powder, flaxseed, cocoa powder, baking soda and sea salt, mix well.Maca Power Bars1 In another medium bowl, add the wet ingredients: applesauce, almond milk, egg whites and stevia if using, mix well. Maca Power Bars2 Add the wet ingredients to the dry ingredients and mix until combined.  Stir in the chocolate chips.Maca Power Bars3Grease an 8 x 8 inch baking dish.  Pour the batter into the baking dish – yes, it will be quite thick.Maca Power Bars4Bake for 15 minutes.  Remove from oven, let cool and cut into 8 bars.  Wrap in cellophane or store in an air tight container in the fridge.Maca Power Bars5Enjoy!
