Maca powder has so many benefits. It is awesome for increased energy and athletic performance. Mix it with protein powder and you’ve got the perfect pre-gym snack. Try these maca power bars before your next workout and I know you’ll notice a difference in your energy.
Makes 8 Bars
1 cup dry gluten-free oats – I use Bob’s Red Mill
1 1/2 scoops chocolate protein powder
3 Tbsp red maca powder
1 Tbsp ground flaxseed
1 Tbsp cocoa powder
1 tsp baking soda
1/8 tsp sea salt
1 cup unsweetened applesauce
1/4 cup unsweetened almond milk
1/4 cup liquid egg whites
2 Tbsp chocolate chips
A few drops of liquid stevia to taste – optional
Preheat oven to 350F. In a medium bowl, combine dry ingredients: oats, protein powder, maca powder, flaxseed, cocoa powder, baking soda and sea salt, mix well. In another medium bowl, add the wet ingredients: applesauce, almond milk, egg whites and stevia if using, mix well. Add the wet ingredients to the dry ingredients and mix until combined. Stir in the chocolate chips.Grease an 8 x 8 inch baking dish. Pour the batter into the baking dish – yes, it will be quite thick.Bake for 15 minutes. Remove from oven, let cool and cut into 8 bars. Wrap in cellophane or store in an air tight container in the fridge.Enjoy!
