Heavenly Almond Joy Protein Bars ~ Vegan, GF

I lovveeee Almond Joys!!! Although I really think they should be called Coconut Joys because there is really only two little almonds on top and loads of coconut. Either way; coconut, almonds and chocolate are a great combo. This week I was racking my brain for a protein flavour that I haven’t done yet and voila! This protein bar was created.  I’m pretty sure you’re gonna love them…Almond Joy Protein Bars ~ GF & DF

Makes 4 bars

1/2 cup chocolate protein powder – I use Plant Fusion
1/4 cup coconut flour
1/2 cup unsweetened almond milk – you may need a bit more
2 Tbsp + a bit for sprinkling, unsweetened shredded coconut
1 Tbsp cocoa powder
2 oz dark chocolate – at least 75%
12 raw almonds
A few drops of liquid stevia – optional, depending on how sweet you like it

In a medium bowl, add protein powder, coconut flour, almond milk, shredded coconut, cocoa powder and stevia if using. almond joy bars3 Mix well with your hands and form 4 bars.  The mixture should not be crumbly and should hold together well.  If it’s too crumbly, add a small amount of  almond milk until the right consistency is reached and you can form a solid bar.  almond joy bars4Add 3 almonds on top of each bar, place on a baking sheet and put in the freezer.almond joy bars5

Meanwhile, begin melting the chocolate using a bain marie.  Use the darkest chocolate you can.  The darker, the better as it has less sugar. I used 85%.chocolateOnce the chocolate is melted, remove from heat.  Remove the bars from the freezer and drizzle the chocolate evenly on top of the 4 bars.  Sprinkle each bar with a bit more coconut and place back into the freezer until firm, about 30 minutes. almond joy bars6 Remove from freezer and wrap each one in cellophane or store in an airtight container.  Keep refrigerated.almond joy bars2Enjoy!

    I thought they were those chocolate eclairs but then i spotted a lack of cream…

      Hahah!!! Mmmmmmm eclairs! Yes, this one is free of cream…but still yummy 🙂

    I made these last night! Added a drop of Almond extract to the bars, but otherwise followed the recipe to a T! I also had to use 1oz 53% Cacao chocolate and 1oz 100% Cacao chocolate. Figured they balanced out 🙂
