What’s in my lunchbox?!

Happy Friday everyone!!  I hope you all had a fabulous week. Here’s another look inside my lunchbox; PS it involves lots of chocolate!lunchbox.

Morning Snack: Chocolate Protein Muffin and 1/2 cup of raspberrieslunchbox2Lunch: 150g of baked spaghetti squash, 100g steamed broccoli and 3/4 cup green lentils.  Sprinkle everything with nutritional yeast – yum!

For the lentils, I just cook 1 cup of dry lentils in 2 cups of vegetable stock, add a few cloves of garlic and spices, simmer for 25-30 minutes.  This makes bout 4 servings.lunchbox1Afternoon Snack: Chocolate Plantain Protein Bread (I posted this recipe on my Instagram yesterday – while you’re there, you might as well follow me!) and 15 almonds. Yeah, I know I forgot to add the almonds to the pic – you know what they look like!lunchbox3Chug the water alllll day long!
