Happy Monday everyone!! I think this has become one of my new favourite meatless meals. It’s quick and easy to make, full of protein, good-for-you carbs and healthy fats. I know you’ll love it too! Try these lentil lettuce wraps for dinner tonight.Print Recipe
1/2 cup of cooked lentils (100g)
1 cup chopped veggies: peppers, celery and green onion
2 large leaves of romaine lettuce, rinsed and dried
1/2 avocado, sliced
2 Tbsp salsa
2 Tbsp Greek yogurt
2 Tbsp taco seasoning (mixture of cumin, chili powder, garlic powder and S&P) + 2 Tbsp of water
To save time, cook your lentils the night before, or using a 1:2 ratio of beans to water, add to a pot and simmer for about 30 minutes until all the liquid is absorbed.
In a medium frying pan add the peppers and celery. Sauté for a few minutes. Add the lentils along with the taco seasoning and water. Sauté again for a few more minutes. Scoop this on top of the romaine lettuce and top with green onions, salsa and Greek yogurt.
Wrap it up, devour and enjoy!
