I have another awesome protein packed energy snack for you guys! These would make a great pre or post gym snack or just something you can grab on the go. To save time, next time you cook quinoa, make some extra so you ‘ll have enough for this recipe 🙂Print Recipe
Makes 8 bars
2 cups cooked quinoa
1/2 cup PB2 + 1/4 cup water (or 1/2 cup natural peanut butter)
1 ripe banana
1 Tbsp organic Dutch cocoa
2 medjool dates
1 scoop protein powder (I used Plant Fusion Vanilla)
2 Tbsp goji berries
2 Tbsp flaxseed
2 Tbsp slivered almonds
Add the cooked quinoa to a large bowl. In a blender, combine PB2, water, cocoa, dates, and banana. Blend until smooth (by the way, this alone, makes an incredible pudding!) Add this to the quinoa. Stir in the remaining ingredients until well combined. Press mixture into an 8″ x 8″ baking dish and freeze until firm, at least 30 minutes. Remove from freezer, cut into 8 bars and wrap in cellophane to keep fresh.
