I came across this ad for So Delicious Coconut Milk and their Holiday Flavours. I was instantly drawn to the mint chocolate flavour – my favourite combo! I figured this would be easy to make by simply adding cocoa and mint to my almond milk. You also don’t get all those nasty additives and preservatives that are found even in coconut milk. The result?! Glorious! You can easily whip this up yourself at home. It tastes great added to your coffee, have it cold or warm up a mug sit by the tree 🙂
1 cup raw almonds, soaked overnight
3 cups filtered water
1/4 cup raw cacao
5-8 drops liquid stevia to your desired sweetness (could also use 4 or 5 dates)
1/4 cup fresh mint leaves or a few drops of mint extractPlace all ingredients in a blender and blend on high until smooth and creamy. Strain through a cheese cloth or nut milk bag if preferred. Keep refrigerated for up to 5 days.
