No-Bake Goji Berry Energy Bars

I was cleaning out the pantry and came across a half empty bag of goji berries.  Where did these little fellas come from? I thought I had used them all up!  I was just thinking of ways I could switch up my protein bar recipe to make it paleo – without my trusty oat flour.  I can honestly say these are my new favourite bars.  This is what I came up with…photo 1(43)Print Recipe

Makes 4 Bars

1/2 cup goji berries
6-8 medjool dates (about 60g)
1/2 cup protein powder (2 full scoops) – I used Plant Fusion
2 Tbsp coconut flour
1/2 cup + 2 Tbsp almond milk
1 Tbsp Enjoy Life chocolate chips (optional)

Add the goji berries, dates and almond milk to a blender or food processor and blend on high until well combined.  Add the protein powder and coconut flour, blend again.  You may need to add more almond milk or coconut flour to adjust the consistency. It needs to be thick and moldable with your hands.photo 2(45)Transfer to a bowl and stir in chocolate chips.  Divide into 4 balls.  Shape the balls into bars.  Rub a bit of coconut oil on your hands first so the mixture does not stick to them.photo 3(34)

photo 4(19)Place the bars in the freezer for about 30 minutes until set.  Wrap individually in plastic wrap and keep refrigerated.
