I had a bunch of very ripe bananas ready to be frozen for smoothies or blended into pudding. Today, I chose the latter. Who doesn’t love a glorious bowl of pudding? Do you remember having these as a kid, or maybe you’re packing them in your own kid’s lunches?I’ve had my fair share of them in my day. Have you ever really looked at the ingredients? There are some scary things hiding in plain ‘ol vanilla pudding. Besides the added sugar and other chemicals I can’t pronounce, there are Yellow 5 and Yellow 6 artificial dyes. You may recall hearing about a petition demanding Kraft remove yellow 5 & 6 dyes from their Macaroni and Cheese (or Kraft Dinner to us Canadians). And rightfully so as it has been known to cause asthma, eczema, hyperactivity and learning impairments in children.
So, let’s ditched the boxed stuff full of additives, artificial flavourings and dyes and make a healthy version. With only four ingredients, you can easily whip this up tonight!Print Recipe
1 large ripe banana
1/2 ripe avocado
2 Tbsp almond milk
1 scoop vanilla protein powder (I used Plant Fusion)
Add all the ingredients to a blender and blend on high until smooth and creamy. Transfer to two bowls and refrigerate for 30 minutes. Sprinkle with unsweetened coconut and sliced bananas.
Voila! A quick and easy, healthy dessert that everyone will love! It’s also dairy-free, gluten-free, and paleo.
Try experimenting with different flavours of protein powder or add some non-dairy yogurt to make it extra creamy (it won’t be paleo anymore though!)
