Happy Monday!! Today I thought I’d share one of those accidental recipes when you clean out the fridge and end up with a really tasty meal. I love curry, I know it’s not for everyone but if you start out in small doses it’s super delish and won’t overpower the dish. This is a quick and easy meal that will leave you feeling satisfied 🙂Printable Recipe
Serves 2
1 15oz can chickpeas, drained and rinsed (about 1 3/4 cup)
1/2 red pepper, diced
1/2 green pepper, diced
1 cup spinach or kale
1 celery stalk, diced
2 green onions, diced
2 cloves of garlic, minced
1-2 tsp curry powder
1-2 tsp ground cloves
2 Tbsp fresh cilantro, chopped
2 Tbsp fresh squeezed lemon juice (about half a lemon)
Drizzle of olive oil
S&P to taste
Drizzle olive oil in a large frying pan over medium high heat. Add chickpeas, peppers, celery, S&P and saute for a few minutes. Add garlic, curry, and cloves. Saute for another 5 minutes or so stirring frequently. Add the spinach, green onions, cilantro and lemon juice and saute for another 2 or 3 minutes. Remove from heat and serve into 2 bowls.

Although, I don’t do it ALL the time, sometimes I go for canned for the convenience 🙂
