Pumped up for pumpkin flavoured everything! ~ protein bar recipe

So, it’s the beginning of September and while everyone is all boo-hooing about summer ending (seriously, if you love the heat so much, move south – there, I said it) I welcome fall with open arms.  I’m a true Canadian and I love my spring, summer, fall and winters.  (Oh and don’t be surprised in a few months when I start to go nuts about winter and Christmas – I’m just warning you now).

I love everything about fall, the cool crisp air, the leaves changing, sweaters, scarfs, boots, lattes, and pumpkin flavoured everything!  Yes, I jump on the pumpkin band wagon every year. Heck, I like it year round.  This week for my protein snack I made pumpkin carrot vanilla protein bars – yum! I just modified my usual protein bar recipe and added in some pumpkin and carrot flavours.  That’s the great thing about these recipes, when you find a good base you can mix and match with so many different flavours!  Check it out, I know you pumpkin lovers will approve 😉pumpkin2Makes 8 bars

1/2 15oz can of 100% pumpkin puree (not pumpkin pie filling! There should be no sugar added)
4oz jar carrot baby food
1/4 cup liquid egg whites
1 tsp vanilla extract
1 large carrot, grated
1 cup oat flour
2 heaping scoops of vanilla protein powder
1 tsp baking soda
1 tsp powdered stevia (more if you like it sweeter)
1 tsp pumpkin spice
1/2 tsp cinnamon
1/4 chopped nuts (pecans, almonds, or walnuts) optional
Pinch of salt

Preheat your oven to 350F.  In a medium bowl, mix your wet ingredients together (first 4 ingredients). In a large bowl, mix together your dry ingredients (last 9 ingredients). Add the wet to the dry and mix until combined. The batter will be thick. Spray an 8 x 8 inch baking dish with non-stick spray. Pour the batter into the dish and pat down. Bake for 20 minutes.  Remove from oven and let cool. Cut into 8 bars, wrap in cellophane and refrigerate.pumpkinNutritional Info per par (with nuts)
