Do you ever just crave something sweet!?! Of course you do, who doesn’t?! It can be hard to stay on track and still eat clean while indulging every now and then. I threw this together with just a few things I had in the cupboard and it kept me from running to the store for a chocolate bar. I guarantee your kids will love them too!
For the cereal, I used Nature’s Path Gluten Free Honey’d Corn Flakes. You could also use their Crispy Rice Cereal. I love Nature’s Path, not only do they offer many gluten free options, but they are also non-GMO and Certified Organic, you can actually pronounce all the ingredients. And they taste good!Makes 8 Bars
4 cups dry cereal
1/2 cup PB2 mixed with 1/2 cup water (or you could use natural peanut butter and omit the water)
1/4 cup cacao powder (or cocoa powder)
2 Tbsp unsweetened coconut
3 Tbsp honey
1 tsp vanilla extract
In a large bowl, if you are using a flake cereal, crush the cereal using a potato masher – you don’t have to do this if using the crispy rice cereal. Add coconut and stir. In a microwave safe bowl, add the PB2 and water, stir until creamy. Add in the cacao powder, vanilla and honey and stir until well combined. If you use natural peanut butter you may have to microwave for 30 seconds to soften the peanut butter. The mixture should be smooth and creamy; if not, add a bit more water.Now it’s time to get dirty! Add the peanut butter chocolate mixture to the dry cereal and coconut and really work it in with your hands until it is all combined. Press this mixture into an 8 x 8 pan and refrigerate for at least an hour. Cut into 8 squares. Keep the squares refrigerated.
These bars are sure to cure that sweet tooth for a lot less calories. Feel free to experiment…try adding chocolate chips, dried cranberries, or even some protein powder!
