I vowed not to buy any more protein powder until I have gone through this giant container of strawberry flavoured protein powder sitting in my cupboard. It’s been somewhat difficult because I often use vanilla or chocolate in my smoothies and bars. So now I am stuck with trying to incorporate this flavour into my recipes. It just so happened that I also had a batch of bananas on the counter starting to get really ripe which I normally would freeze for smoothies. Bananas and strawberries go together like peanut butter and jelly, like cheese and wine, like Mario and Luigi…you get the point. I simply subbed these ingredients into another recipe I’ve used before and I really liked how they turned out…I hope you do too!Makes 8 Bars
2 ripe medium sized bananas, about 225g
1/2 cup organic unsweetened apple sauce
1/4 cup liquid egg whites
1 tsp vanilla extract
1 cup oat flour (I used Bob’s Red Mill Gluten Free)
1/2 cup strawberry flavoured protein powder – vanilla would also work
1 tsp baking soda
1 tsp stevia powder – or sweetener of your choice
Pinch of salt
Preheat your oven to 350F. In a large bowl, mash the two bananas, add the apple sauce, egg whites and vanilla, and mix well. In another bowl, add the remaining dry ingredients and mix well. Add the dry ingredients to the wet ingredients and stir until combined.Grease an 8 x 8 baking dish and pour in the batter. Bake for 15 minutes or until toothpick comes out clean. Cut into 8 bars and keep refrigerated.
I think adding walnuts or almonds would be a great addition too! Have fun experimenting 🙂 You can also make these ahead of time and freeze them.
