Creamy Cashew Cheese ~ Dairy Free & Vegan

It’s Meatless Monday! Why not make some veggie pizza with homemade vegan cheese?!? After seeing many posts on Pinterest and WordPress about making your own dairy free cheese, I have finally tried it! Who would have thought you could make creamy, melted cheese from cashews?! It might sound a bit strange but hear me out 😉

1/4 cup raw unsalted cashews
1 cup hot water
1 Tbsp fresh lemon juice (about 1/4 lemon)
1/2 tsp salt
2 Tbsp arrowroot starch
2 Tbsp nutritional yeast
1 tsp onion powder
1 tsp garlic powder

Blend all ingredients together in a high speed blender or food processor until completely smooth, about 1 minute. Pour into a medium saucepan and cook, stirring constantly over medium heat until sauce begins to thicken. Keep an eye on it so it doesn’t burn! photo 5(8)Once the sauce has thickened to your likening, remove from heat and let it cool for a few minutes.  You can add this to your pizza (like I did!) or use it on grilled cheese or in macaroni and cheese. Store leftovers in the fridge in an air-tight container for up to 3 days.
