Spinach Rice Pasta with Cashew Pesto

Hey guys! As promised, I’m back with a simple recipe that uses the cashew pesto I posted about yesterday.

Last time I was at the grocery store, I came across this:spinach pasta2I’ve used Tinkyada brown rice pasta many times before, but this was the first time I came across SPINACH brown rice pasta.  I couldn’t pass it up and thought “What better pasta to go with this pesto?!”

There’s no real “step by step” (seriously though, who remembers this show?!) recipe for this dish.  I simply cooked the pasta according to package directions (I used half the recommended serving), strained it, tossed it with a couple tablespoons of cashew pesto, added some edamame (cooked according to package directions) and grilled peppers.  It’s that easy!edamame pastaIf you’re wondering how the spinach pasta tasted, I didn’t notice a huge “spinach” flavour to it. It wasn’t all that different from the regular brown rice pasta, but still tasty nonetheless!

    Tinkyada is definitely our family’s favorite gluten free pasta – it is the only thing we have found that comes close to regular pasta!

      I totally agree! It’s a great brand. My non-GF husband even likes it! That’s when I know it’s good 🙂
