Blackberry Muffins ~ Gluten Free

We were at the farmer’s market over the weekend and I picked up half a flat of beautiful blackberries.  I was trying to decide on what recipes I should try, so I asked my husband what he wanted and he said “MUFFINS!” So muffins, it is.  These are gluten free but you’d never know it!blackberryMakes 12 Muffins

1/4 cup almond flour/meal
1 3/4 cup brown rice flour
1 tsp xanthan gum
1/2 tsp baking soda
1/8 tsp salt
2 whole eggs
2 egg whites
1/4 cup organic honey
2 Tbsp coconut oil
1 tsp vanilla extract
1 tsp lemon zest (the zest of half a lemon)
2 Tbsp fresh lemon juice (the juice of half a lemon)
1 cup of blackberries (feel free to sub in raspberries or blueberries or a combo!)

Preheat oven to 350F and line a muffin tin with 12 paper liners.  In a medium bowl, whisk together the first 5 dry ingredients.  In a large bowl add the two eggs, egg whites, honey, olive oil, vanilla, lemon zest and lemon juice.  Beat on medium speed with a hand mixer.  Slowly start adding in the dry ingredients, mixing on low until combined.  With a spatula, gently fold in the berries. huckleberry muffin Using an ice cream scoop or spoon, drop the mixture into the 12 muffin liners until evenly distributed.  Bake for 25 minutes.  Remove from oven and let them cool.photo 2(34)Store these in an air tight container in the fridge.  Heat them up for 10 seconds before eating so the berries are nice and gooey!

    What if you lack coconut oil? Will a non-solid oil or butter work?

      I think any other light oil would work. Personally, I would try butter over olive oil.
