Sweet Potato & Pumpkin Protein Muffins with Pecans

I have another yummy protein muffin for you guys!! This one is a bit of everything, sweet, soft and crunchy – good combo, right!?  This makes a great pre -gym snack. As always, they’re super fast and easy to make…check it out!

protein muffinsMakes 8 muffins

3/4 cup liquid egg whites (or 6 egg whites)
1 cup yam, cooked and mashed
1/3 cup canned pumpkin (make sure it is 100% natural with no sugar added)
2 tsp vanilla
1/2 cup oat flour (I use Bob’s Red Mill Gluten Free)
2 scoops vanilla protein powder
1 tsp baking powder
2 tsp cinnamon
2 tsp pumpkin pie spice
1/4 cup chopped pecans (or walnuts or any nut!)

Preheat oven to 350F.  In a large bowl mix together the first four ingredients. In a medium bowl stir together the remaining dry ingredients.  Add the dry ingredients to the wet ingredients and stir to combine.

Line muffin tin with 8 paper liners or spray with non-stick spray and divide the batter into 8 muffins. Bake for 25 minutes.  Store in the fridge in an air tight container.
