Mango Coconut Ice Cream – with Spinach!

OK, hear me out! I know what you’re thinking “Green ice cream?!? Girl, you crazy!” Seriously folks, this is another sneaky recipe where you can hide the veggies and never know they’re there, I promise. Trick your kids, husband, mother, grandma…whomever!

We are in a massive heat wave right now. This is the temperature inside our house inferno.photo 2(2)That’s 31C in my house! I don’t want to turn the oven on or even stand over a BBQ.  All I want to eat are salads and ice cream – mostly ice cream.  If I could have it for breakfast, lunch, and dinner, I would.  Thankfully I have my Vitamix, which can whizz up tasty ice cream from fruit so you’re not getting all the added sugar and fat.  I saw a recipe online for mango spinach ice cream but I thought I would add some coconut to it.  It was SO good and you would never know there was spinach in there besides the fact that it is bright green!

2 cups frozen mango
3 handfuls spinach
1/4 cup coconut water
1 Tbsp unsweetened shredded coconut and a sprinkle for garnish
2-3 drops liquid stevia (optional)

Add all the ingredients to a Vitamix or high speed blender. Start off on low speed. using the tamper, push the ingredients down towards the blades, slowly increase the speed until you’ve reached ice cream consistency or the “four mounds”.photo 3(1)It was so hot I found that it melted quite fast so I popped it in the freezer for about half an hour.  Sprinkle with shredded coconut, sit back and revel in the fact that you’re eating ice cream with spinach and enjoying it!

You could also make this into a smoothie by adding more coconut water or just plain water.
