Sweet & Crunchy Quinoa Granola

The other day my boss gave me some recipes she thought I might like.  This one piqued my interest because it was not just any granola, but quinoa granola! It sounded too good to pass up.  It came out sweet and crunchy, but most of all, it was easy to make – thank goodness, because I’ve been feeling a bit under the weather and not exactly up for trying new recipes.   If you like granola, you must try this one!granolaMakes 6 cups

2 cups oats (I used Bob’s Red Mill Gluten Free)
1 cup dry quinoa (not cooked!), rinsed and patted dry
3/4 cup pecan pieces
1/4 cup goji berries (or any dried berry)
1/3 cup unsweetened coconut flakes
1/4 cup coconut oil, melted
1/3 cup agave nectar
1 tsp cinnamon
1/2 tsp nutmeg

Preheat your oven to 300F. Combine all the ingredients in a large bowl and mix well.  Spread an even layer onto a large cookie sheet (I spread it out over two sheets).  Cook for 30 minutes, stopping to stir the mixture 3 times throughout the cooking process.  Remove from oven, let cool completely and store in an airtight container.photo 2(29)This would be great on top of yogurt with some berries or even with a splash of milk.  Enjoy!

    Meant to comment when I first saw this, but couldn’t! It looks so tasty! I’ve recently gotten into quinoa. One dish my mom made made me (finally) like it. And this is in a granola…so I’m thinking you can’t really go wrong 🙂 Thanks for sharing!

      Oh nice!!! Thanks! I love quinoa too, even more than rice. It’s totally taken over in this house… the hubbs even likes it 😉
