Orange Pumpkin Vanilla Protein Muffins

I am back!!! What a whirlwind vacation. It always goes by too fast and there never seems to be enough time to visit whit everyone, but what can you do!? The wedding was beautiful and we were so happy to be there for all the excitement. Now it’s back to my regular clean eating schedule and cutting back on the booze as I think I drank enough to put a sailor to shame 😉

Here’s another protein snack for you with a bit of a twist.  I like to keep my snacks low in sugar and high in protein. Bodybuilding.com is a great website for not only fitness routines but recipes! I think most of my protein bar recipes are from there. This one has a nice flavour though with a hint of orange. It’s different from your traditional chocolate or vanilla flavour. Here is the original recipe (they topped theirs with protein powder frosting!) You’ll see I doubled the recipe below to make 12 muffins.vanilla oragne proteinbar2Makes 12 muffins

1 cup pumpkin puree (no sugar added!) or cooked sweet potato
1 cup egg whites
1 cup oat flour
1 cup vanilla protein powder (I used a casein whey)
1/2 cup almond milk
1 Tbsp orange zest
2 tsp baking powder
2 tsp vanilla extract
vanilla oragne protein barPreheat oven to 350F. Add the wet ingredients to a bowl and mix well. Fold in the dry ingredients until just combined. Pour batter into 12 muffin cups.Bake for 20-25 minutes, remove from oven and allow to cool.
