White Bean, Carrot and Oat Burgers

Happy Monday!! I have a new bean burger recipe for you all. I was playing around with some different beans and switched it up with white kidney beans this time and added some rolled gluten free oats.  It’s packed full of protein and guaranteed to leave you feeling full and satisfied.bean oat burgerMakes 4 burgers

19 oz can white kidney beans, drained and rinsed
1/4 cup gluten free oats (I used Bob’s Red Mill)
1/4 cup salsa
1 carrot, grated
1/2 red onion, diced
2 cloves of garlic, minced
1 tsp onion salt
1 tsp paprika
1 tsp cumin
Salt and pepper to taste

First, add the beans to a medium bowl and mash with a potato masher. Add the rest of the ingredients and form into 4 patties.  You can either pan fry these or spray a piece of tin foil with non-sticks pray and BBQ on medium for 7-8 minutes a side.  If you’re wondering how I shape my burgers, I use the lid from an empty protein powder container, line it with cellophane and press the mixture into it.  Works great for meat burgers too.  Perfectly shaped every time!bean oat burger2I served mine on half an Ezekiel wrap topped with homemade salsa and avocado with a side of grilled asparagus. Delish!

    Sounds so good. Will have to try. What is an Ezekiel wrap? Gluten free by any chance? I’ve been looking for gluten/corn free wraps and have yet to find any. 🙁

    So there’s the lid in action – they look great, perfect burgerage!!! And my other half would love these she being a vegetarian (well pescatarian actually). And me, I’m an anything-arian. If such a thing exists.

      That’s great, I hope she likes them! Yes, this is the lid in action. Although I can see how a food ring would be more useful, being a ring and all you don’t have to flip them over to plop them out.
