Strawberry Watermelon Popsicles – only 25 calories!

We’ve been having spotty weather lately going from one extreme to the next. Hot and sunny one day to rainy and cool the next, actually there was snow up in the mountains yesterday! Well, that’s Spring for ya. On one of our sunny days I was craving something cool and refreshing so off to Pinterest I went and found this recipe I had pinned a while back.  It is super easy to make, VERY low-cal and quick (minus the freezing time).  Whip these up and enjoy one on your deck while you take in some vitamin 1Makes 12 Popsicles

4 cups watermelon, cubed
12 large strawberries, set 5 aside, cut the rest in half
10 fresh mint leaves
8-10 drops liquid stevia (optional)

In a blender, add all the ingredients except the 5 strawberries you set aside. Blend until well combined. Dice the remaining 5 strawberries and place a few chunks in the bottom of the molds, fill half way with mixture, add a few more chunks, fill to the top, add the sticks in and freeze! Enjoy!photo 2

    Nice idea to add mint! I’ve made fruit-only popsicles before and felt they were missing something. I’ll have to try your recipe soon.
