After reading this FABULOUS book, Crazy Sexy Diet by Kris Carr, I’ve been inspired to eat more raw, vegan foods. I’ll talk more about her book in a later post. In the meantime, you should really check out her website/blog; she is an incredible woman.I wanted to try this recipe from her book for tofu eggless salad. As you can tell from the title, there is no actual egg in here; it is made with tofu and instead of vegan mayonnaise I used avocado. It turned out pretty great!Tofu Eggless Salad
150g firm tofu
50g avocado (about half a medium avocado) – her recipe called for about 1/3 cup of vegan mayonnaise
1 green onion, diced
1 medium carrot, grated
1 Tbsp nutritional yeast
1 Tbsp chopped parsley
1/2 Tbsp Dijon mustard
Salt and pepper to taste
In a bowl crumble the tofu by hand. In a separate bowl, mash the avocado. Add to the tofu along with the remaining ingredients. Mix by hand or fold in, don’t over mix.

122 Calories, 5g Carbs, 6g Fat, 9g Protein, 42mg Sodium, 1g Sugar
This made a great lunch, I had it on half an Ezekiel wrap with lettuce. Delicious and filling!
