You don’t win friends with salad – well, this one you do!


Can salad really be made into a meal instead of that bowl on the side that you just force yourself to eat to get the greens into you!?! YES IT CAN!! And I hate to break it to you Bart and Homer but you can definitely win friends with salad – especially Taco Salad! I posted this on my Facebook Page a while back but thought I would do an official post on the blog. This is a meal in itself as it’s packed with 23g of protein thanks to the turkey and beans. This is definitely a favourite in our house – the hubbs loves it!! So.Here.It.Is…photo 1(8)Turkey Taco Salad

Serves 4

16 oz lean ground turkey (or chicken…or meat substitute)
½ package of low sodium taco seasoning mixed with ½ cup of water
2 Tbsp tomato paste
6 cups lettuce, washed and dried
2 green onions, diced
1 whole green or red pepper (120g), diced
1/2 cup black beans, rinsed
1/2 cup yellow corn
1/2 cup salsa
1/2 cup of dairy-free cheese or mozzarella cheese
Handful of corn chips, crushed (optional)

In a frying pan, cook turkey, add taco seasoning, water, and tomato paste, simmer on low until it thickens. In a large mixing bowl, toss lettuce, green pepper, green onion, black beans and corn. Dish out 4 servings of the salad, top each one with 1/4 of the turkey mixture, 2 Tbsp of salsa, 2 Tbsp of cheese, and a sprinkle of corn chips! Delish!

    I love that Simpsons clip. But I try not to sing it in front of the Mrs (she’s vegetarian) – but it’s VERY catchy!

    I have a great taco seasoning recipe that my students use that is homemade without all of the added chemicals and preservatives that packaged taco seasonings have. I’ll pass it on to you if you want, it’s all just spices right from your kitchen, way better tasting than the packaged stuff too! 😉

      Awesome! Yes, sometimes I just throw in chilli, garlic, paprika, and cumin, but I don’t really have measurements I just toss it in. I buy taco seasoning when I’m feeling lazy but I always go for organic low sodium ones….but please pass it along!! I’d love to try it 😉
