It’s rest day! You worked hard all week, right?!?! Why not give yourselves a little “treat”. Do you love chocolate? Do you love peanut butter? Do you love ice cream? Well this recipe smashes them all together into a chocolatey, peanut buttery, ice creamy cup of goodness. I got the recipe from The Eat-Clean Diet. They were super easy to make and honestly, taste too much like dessert to only have 62 calories each, 10g of protein and almost ZERO fat and sugar.
I followed the above recipe except I used PB2 for the peanut butter (the nutritional info would change if you are using natural peanut butter). I also doubled the recipe and stretched it out to 12 servings.
Frozen Chocolate Protein PB Cups
Makes 12 cups
4 scoops chocolate protein powder (I used Muscletech – Nitro-Tech Hardcore Pro Series – Chocolate)
1/4 cup pure unsweetened cocoa powder
2 cups water
1/2 cup of PB2 mixed with desired amount of water to make it smooth and creamy (you could use 1/2 cup of natural peanut butter)
5 drops of liquid stevia or 5 packets
12 muffin liners
Line a muffin tin with 12 muffins liners. In a blender mix protein powder, cocoa, water and stevia. Fill muffin liners about half way with the chocolate mixture. Add a spoon of peanut butter to each cup, fill the cups with the remaining chocolate mixture. Place in the freezer for at least an hour.
These need to be keep frozen. When you are ready to have one, let it sit out for 5-10 minutes (or even nuke it for 10 seconds) because they will be rock hard! Peel off the paper and enjoy!
Variations: Try replacing the water with milk for a creamier dessert 🙂

These look like a great treat! What is PB 2? I always use natural peanut butter anyway, but I’m curious to what it is.
Thanks! PB2 is a powdered peanut butter; I talk more about it in this post:http://thehappyhealthfreak.com/2013/02/26/my-obsession-with-pb2/. Peanut flour is also very similar. Basically it is peanut butter with all the oil removed. You mix it with water and it becomes the same consistency as regular peanut butter. I love it!
