I’m always on the prowl (no, not THAT kind of prowl) searching the Internet for recipes, especially pre/post workout snacks. Here’s a great one I found for protein muffins on this website. They turned out really good and of course were really easy to make – I don’t do difficult recipes – who has time for that?! These pack 8g of protein per muffin and only 110 calories, not too shabby. Get that muffin tin out and let’s start baking!
Banana Strawberry Protein Muffins
Makes 12 muffins
1 ripe banana, mashed
3/4 cup strawberries (about 100g)
2 cups gluten-free rolled oats
2 scoops vanilla protein powder
1 1/2 cup liquid egg whites – or 4 whole egg whites
1/2 cup dairy-free yogurt – I used Amande Vanilla
10-12 drops of liquid stevia extract – or sweetener of your choice
2 tsp cinnamon
1/2 tsp baking powder
pinch of salt
Preheat oven to 350F. In a medium bowl, mash banana and strawberry. Add liquid ingredients. Stir in dry ingredients until mixed. My batter was really runny but they turned out fine!Spray a muffin tin with non-stick spray or use muffin liners. I don’t think I greased mine well enough because they really stuck to the pan, next time I’ll use muffin liners! Bake in the oven for 18-20 minutes.
