The other night I asked the hubbs what I should post about and his answer was “You should do more desserts!!” Hmmm….I think he just wants to taste test the creations. I’m onto you! So being the awesome wifey that I am I started searching WordPress for some recipes and I came across this one. It was 9:00pm and I thought what better time to make cookies?! Luckily these only took about 20 minutes, baking time included, and with PB2 they are only about 65 calories each. If you are really watching your sugar you could swap the chocolate chips for dried fruit. I pretty much followed the recipe except used PB2 for peanut butter and half the chocolate chips. These are gluten free and have very little sugar. You ready to start making these tasty fellas!?!?
Chocolate Oatmeal Cookies
Makes 10 cookies
1 banana – the riper, the better!
3/4 cup gluten-free oats
1/3 cup unsweetened applesauce
1/2 tsp vanilla
3 Tbsp PB2 mixed with water or 2 Tbsp of natural peanut butter
3 Tbsp dark chocolate chips
1 packet stevia or Tbsp honey
Preheat oven to 350F. Mash up banana in a bowl, add applesauce, vanilla, stevia and PB2; mix well.
Stir in oats, and chocolate chips.
Spoon out 10 cookies on a baking sheet lined with parchment paper. Bake for 13-15 minutes.
Ta-da! Healthy, clean cookies in under 20 minutes. Enjoy 🙂
