Chocolate PB Protein Power Balls!

Lately I’ve been wanting to make a protein snack to take with me to have right after the gym. I go straight from work to the gym and I just can’t seem to fathom mixing my protein powder with water at the gym; it really needs to be mixed with milk and carrying that around all day in my lunch bag is not going to happen. I’ve made my fair share of protein bars but this time I wanted to try something a little more chocolate-y and peanut buttery…and in the shape of balls…I dunno why…maybe they seem easier to pop in your mouth?!?! Ok I’ll stop before someone makes a “that’s what she said” comment.

So let’s get this ball a-rollin’….

Chocolate PB Protein Power Balls

Makes 20 balls

3 scoops of vanilla protein powder (chocolate would also be good, I just didn’t have any)
1/2 cup of PB2 (or all natural peanut butter)
1/2 cup of dry, gluten-free oats
1/4 cup of flaxseeds (whole or ground – your choice!)
1/2 cup of almond milk
12 pitted dates
3 Tbsp of premium unsweetened cocoa
3 packets of Stevia

If your dates are not soft, soak them in warm water for about half an hour and then drain. Mix all the dry ingredients in a bowl until well combined.  Using a food processor or hand blender, blend the dates until mushy.  Add this to the dry ingredients, along with the almond milk. This mixture is VERY sticky and will stick to your hands when rolling the balls so either grease your palms with a bit of olive oil or make sure they are wet at all times. Start rollin’ the balls….rollin’ in the deeeeeep – singing Adele is optional. Place the balls on wax paper on a cookie sheet.

Freeze for at least half an hour (you could store them in the freezer all the time, depends on how hard you want them – man, so many “that’s what she said” jokes) or transfer to an air tight container and keep in the fridge.  I take two of these for my post-gym snack 🙂

These are also great to take with you traveling! We’re heading to Spokane this weekend so I will pack a few with me to tie me over on the drive so I don’t get “hangry” and annoy the hubbs!! Nobody wants to see me when I’m hungry – NOBODY.
