Chocolate PB Protein Power Balls

Lately I’ve been wanting to make a protein snack to take with me to have right after the gym. I go straight from work to the gym and I just can’t seem to fathom mixing my protein powder with water at the gym; it really needs to be mixed with milk and carrying that around all day in my lunch bag is not going to happen. I’ve made my fair share of protein bars but this time I wanted to try something a little more chocolate-y and peanut buttery…and in the shape of balls…I dunno why…maybe they seem easier to pop in your mouth?!?! Ok I’ll stop before someone makes a “that’s what she said” comment.

So let’s get this ball a-rollin’….

  1. 12 pitted medjool dates
  2. 3 scoops of vanilla or chocolate protein powder
  3. 1/2 cup of PB2 powder
  4. 1/2 cup of dry, gluten-free oats
  5. 1/4 cup of ground flaxseeds
  6. 3 Tbsp of unsweetened cocoa powder
  7. 3 packets of stevia or sweetener equivalent
  8. 1/2 cup of unsweetened almond milk
  1. Line a baking sheet with parchment paper.
  2. If your dates are not soft, soak them in warm water for about half an hour and then drain.
  3. Mix all the dry ingredients (protein powder, PB2, oats, flaxseed, cocoa powder and stevia) in a bowl until well combined.
  4. Using a food processor or hand blender, blend the dates until mushy. Add this to the dry ingredients, along with the almond milk.
  5. This mixture is VERY sticky and will stick to your hands when rolling the balls so either grease your palms with a bit of olive oil or make sure they are wet at all times.
  6. Roll into balls and place on baking sheet.
  7. Freeze for at least half an hour (you could store them in the freezer all the time, depends on how firm you want them) or transfer to an air tight container and keep in the fridge.
