Make your own salad dressings!

Seriously people, throw out those bottled dressings – please!!! Did you know you can whip up your own dressing in minutes with ingredients I’m sure you already have and give yourself a healthier, more flavourful dressing for your salad!! I know you can do it. Let’s check out a few that I’ve made – feel free to experiment with your own flavours in your kitchen 🙂 All you need is a Mason jar or air-tight container with a leak-proof lid because you’ll be shakin’ it all about. These recipes are about 70-80 calories per tablespoon; you can make them even lighter by reducing the oil.

Your base…

I usually use a 2 to 1 ratio of extra virgin olive oil to vinegar. You can do 3 to 1 if you find it too “vinegary”. You can choose any type of vinegar you prefer, white wine, red wine, rice, cider, balsamic or any flavoured vinegar. This is the base, then I add some other simple ingredients for flavour! The recipes yield about 1/2 – 3/4 cup of dressing (feel free to double this if you want to make a larger batch). These will make about 7-10 servings – a serving is 1 tablespoon!

Ginger LIme

Ginger Lime

Italian Vinaigrette
1/4 cup of extra virgin olive oil
2 Tbsp of cider vinegar
1 Tbsp of Italian herbs, chopped (can use dry or fresh)
1 tsp of garlic powder
Squeeze of fresh lemon juice

Honey Balsamic Dijon
1/4 cup of extra virgin olive oil
2 Tbsp of balsamic vinegar
1/2 Tbsp of honey
1 tsp Dijon mustard
1 tsp of garlic powder
Squeeze of fresh lemon juice

Ginger Lime (my Dad’s recipe!)
1/4 cup of extra virgin olive oil
2 Tbsp of white vinegar
1 Tbsp of honey
1 tsp of freshly grated ginger
Fresh squeezed lime (about half a lime)

Lemon Parmesan – this tastes like a light Cesar dressing
2 Tbsp of lemon juice
2 Tbsp of olive oil
2 Tbsp of grated Parmesan cheese
1 Tablespoon of honey
1/2 tsp salt
1/2 tsp pepper

Toss the ingredients in a Mason jar or spill-proof container and shake it up! If you can, make it ahead of time, so that your flavours have time to “marry”, but this is not mandatory. I often make it right before pouring on the salad and it’s just as good!

    Hi Honey, I now use about half the oil and more lime juice and a bit more honey, still tastes great. BTW, your mom and I were in Toronto on the weekend and brought home some real Italian EVOO and I can tell you it makes a BIG difference in the flavor of your dressings. Most of the oil we have in our stores here is not at all from Italy, maybe the bottle are but NOT the oil. There are ways to identify that the oil is indeed Italian by certain makings on the label or bottle, the oil we purchased is marked D.O.P. “Valle del Belice”

      Absolutely! Authentic oil makes all the difference. There is a shop here in Trail that carries real Italian olive oil…so good!!! And yes, cutting back on the oil is a great way to save on the fat/calories 🙂 Thanks Dad!!
